    Chaurice - fresh pork sausage with onions,
    parsley, thyme & cayenne. Best grilled until fully cooked.

    Boudin - spicy Cajun rice & pork sausage (fully cooked), can be steamed, grilled, or roasted. We like to serve it with Cochon's Abita beer wholegrain mustard.

    Andouille - spiced smoked pork sausage. A cornerstone of Cajun cooking, traditionally used to make gumbo, jambalaya, hearty soups and stews, or grilled.

    Cajun Smoked Sausage - rustic version of our andouille with a finer grind and a heavier smoke.

    Smoked Pork Chops - best pan seared, roasted
    or grilled.

    Jambalaya Stuffed Chicken - Pre-heat oven to 450°F. Rub the chicken with salt, pepper & oil, put on a sheet pan & cook for 15 min. Turn down heat to 375°F & cook for 45 minutes to 1 hour until internal temperature reaches 165°F in the center of the jambalaya. Remove chicken from oven and rest it for about 20 minutes. Enjoy!

    Keep refrigerated, do not freeze if possible.
